Notes: Alipus Mezcal San Andres is a single-village mezcal that is made from agave espadín using traditional methods. The agave is roasted in an underground pit oven, mashed by hand with wooden mallets, and distilled in a copper still. This results in a complex and smoky mezcal with notes of caramel, honey, and green pepper. The village of San Andres produces some of the best mezcal in the Oaxaca region and has been making mezcal for generations.
